Our Vienna Hausbrot is inspired by the dark, aromatic rye breads of Vienna. Made with 70% whole rye flour and 30% wheat flour, this loaf is slowly fermented with our rye sourdough to develop deep flavour and a moist, long-keeping crumb.
The dough is perfumed with a traditional bread spice blend of coriander, fennel, caraway and star anise, giving the loaf its signature warm and fragrant aroma. We also incorporate Altbrot — a traditional method where toasted bread is soaked and blended back into the dough — which adds depth, moisture and a beautiful softness to the crumb.
The result is a hearty yet balanced rye loaf with gentle acidity, complex spice notes and a flavour that develops even further over the following days. It’s excellent with cheese, smoked fish, charcuterie or simply good butter.
